Grandmother Beaman’s Boiled Custard

Ingredients

3 qt. milk

1 1/2 c. sugar.

1 c. flour

1 1/2 c. milk.

6 egg yolks

1T. vanilla

yellow food coloring (if needed)

Directions

Scald milk.
Add sprinkle of salt.
Stir in sugar.
Make thickening of flour and milk.
Add to egg yolks and beat slightly.
Strain into scalded milk.
Cook, stirring constantly, until custard coats spoon. IMPORTANT: DO NOT BOIL!
Remove from heat.
Add vanilla and a few drops of yellow coloring if needed.
Stir occasionally while cooling to prevent skim from forming.
Strain and store in jars in refrigerator.

Makes 3 1/2 quarts.

Notes

Custard was one of our favorite desserts as we were growing up and was especially good with our homemade fruit cake. John Walker was eating supper at our house (3041 Magnolia Ave.) and offered Bus some fruit cake and custard on our first date. It was good bait--Bus kept coming back!
